Fermentation/Élevage:  ~7 months on the lees in 500L and 1200L barrels, 5% whole cluster fermentation

ABV: 13%

Notes:  ~30 year old vines, indigenous yeast, hand harvested and destemmed small-berry grapes from the best terraces in the Herrenstück, sulfur as needed
